CARNIOTIA Project - IoT with Artificial Intelligence for precise processing of complex meat products

In inBiot we are pleased to announce our participation in the cooperative project "CARNIOTIA - IoT with Artificial Intelligence for the accurate processing of complex meat products". inBiot has received funding for this initiative, within the tractor project CARNITY - Innovation for the ecological and digital transition of the state meat industry and its associated value chain, which has been funded through the aid for industrial strengthening actions in the agri-food sector within the Strategic Project for the Recovery and Economic Transformation Agri-Food (PERTE AGRO), within the framework of the Recovery, Transformation and Resilience Plan, funded by the European Union and managed by the Ministry of Industry and Tourism.

Project Objective

Thanks to this funding, the CARNIOTIA project is being carried out with the aim of improving the quality and efficiency of maturation and airing processes in the meat industry through the use of advanced sensorization technologies, IoT networks and Artificial Intelligence. The project will be developed in our facilities between April 2023 and June 2025, with a budget of 411,926.00 €.

The goal is to optimize these processes through the analysis of the factors that affect them, the sensorization of airing chambers and dryers, and the use of artificial intelligence to improve the quality of the final product.

An essential part of the project is to identify and correlate defects in meat products, such as ham, with indoor air quality parameters. This will be achieved through specific sensorization, which will include the measurement of temperature, relative humidity, volatile organic compounds (VOCs), particulate matter (PM) and formaldehyde.

inBiot's role in the Project

At inBiot, our expertise in indoor air quality monitoring is crucial for this project. We focus on detecting substances in the air that may indicate problems in meat processing. Our expertise in environmental monitoring allows us to identify conditions that could result in defects in meat products, facilitating early intervention and improving the quality and safety of the final product.

Collaboration and Synergy

The project consortium includes leading companies from the meat sector such as Moralejo Selección S.L. and Pernisal, as well as technology companies such as Undanet and Sothis. Two research centers also participate: CARTIF and the University of Valladolid. Each entity contributes its experience in developing and applying innovative technologies, such as ultra-low consumption sensors and advanced analysis techniques, with the aim of digitizing and optimizing processes in the meat industry.

CARNIOTIA represents a significant step towards the digitalization and modernization of the meat industry, integrating advanced technologies to improve airing and maturation processes, monitor environmental parameters in real time and apply artificial intelligence to improve product quality and reduce the appearance of defects. At inBiot, we are proud to play a key role in this initiative, contributing our knowledge in environmental monitoring to ensure excellence in meat products.
